FRENCH TOAST



2 large egg whites
1 large egg
3/4 c. skim milk
1/4 tsp. vanilla extract
1/8 tsp. salt
2 tsp. margarine or butter
8 slices of firm whole wheat bread
Fresh fruit and low sugar syrup for topping

Preheat oven to 200* and place cookie sheet inside. In pie plate, with whisk, beat egg whites, egg, milk, vanilla, and salt until blended. In a 12-inch skillet, melt 1 tsp. butter on medium high heat. Dip bread slices, 1 at a time, in egg mixture, pressing bread lightly to coat both sides well. Place 3-4 slices in skillet, and, turning once, cook 6-8 minutes or until lightly browned. Transfer to oven to keep warm, and cook remaining toast. Serve French Toast with maple syrup and or fresh berries.

Serving size is 2 pieces. 300 Calories per serving.
