Cheddar Potato Soup

3 medium potatoes, cubed
1 large onion, thinly sliced cubes
1 1/2 c. chicken broth
2 c. shredded cheese
salt and pepper to taste

Bring potatoes, onion and broth to boil. Simmer for 10 minutes or until potatoes are tender. Blend until potatoes are somewhat mashed. Add cheese and stir. Optional: add cooked broccoli.
